Prickly Pear Cactus Margarita

I love serving a signature drink at a celebration, but this cocktail is so delicious I’m even known to make it on weekly taco nights.

A few years ago I needed a cocktail recipe for a crowd when I was throwing a Cinco de Mayo Party for some of my Junior League girlfriends in El Paso which is how I stumbled upon a Prickly Pear Cactus Margarita. By the end of the night I was sending home copies of the recipe, it was seriously that good. The flavors were the perfect balance of tart from the lime, sweet from the prickly pear syrup, and spicy from the jalapeño that over the years it has become my go-to.

With May 5th right around the corner, I wanted to share a tried and true entertaining recipe.

Notes:

* I like a little spice to my margaritas so I use a trick my neighbor in El paso taught me. Leave a fresh Jalapeño out until it starts to wrinkle. Add pepper to stovetop eye (works great on gas ranges, not glass. If you have a glass range grab a dry skillet) and “roast”. Let pepper cool, cut down middle, and place on side of glass or let it float in your drink with some lime.

* Need an alcohol free version? Omit the tequila and add a carbonated soda, to taste, like Sprite.
