2022 Fall Bucket List: Pumpkin Spice Sweet Cream Foam, Pumpkin Pancakes, and Walking the Greenway

This weekend I decided to put the laundry aside in favor of spending time enjoying the fall season. It has finally cooled down enough that the bugs [in the south] have settled down and the air is crisp. When this happens there is two solid weeks of gorgeous trees with the most spectacular falling leaves. Its almost like being softly rained on as the leaves float and cover the ground. In the south summer really feels like it falls away in favor of the trees preparing for winter. Summer is finally over.
I decided to treat the family to pumpkin spice sweet cream foam on their coffee and pumpkin pancakes before we headed out on a trail walk with Killian. All things that create memories and all things I wanted to share with y’all.

 

Pumpkin Spice Sweet cream foam Recipe


Ingredients + Directions:

  • 3 Tbsp. Milk

  • 2 Tbsp. Heavy Cream

  • 1 Tbsp. Pumpkin Spice Syrup


    Directions:
    Add all three ingredients into a glass or small container. Whip with a mini handheld frothier until peaks start to form. Add to the top of your coffee. Enjoy with a sprinkle of cinnamon, nutmeg, or pumpkin pie spice.

 

Pumpkin Pancakes Recipe


Ingredients:

  • 1 cup all-purpose flour

  • 2 tablespoons white sugar

  • 1 tablespoon pumpkin pie spice

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup buttermilk

  • ½ cup canned pumpkin

  • ¼ cup canola oil

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 serving nonstick cooking spray

Directions:

Whisk flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt together in a large bowl. Whisk in buttermilk, pumpkin, oil, eggs, and vanilla extract until well blended.

Spray a large nonstick griddle or skillet with cooking spray. Heat over medium heat.

Pour batter by scant 1/3 cupfuls into the hot skillet, working in batches. Cook until bubbles form on the surface of pancakes and bottoms are lightly browned, about 1 1/2 minutes per side. Repeat with remaining batter, spraying the skillet with cooking spray between batches as needed. Serve warm.
