[2023] Fall Bucket List: Scary Movie Night #1

Hooray it’s the 1st Scary Movie Night of the season!
I am so excited for tonight because this kicks off our first fall family activity together.
For 2023 we are mixing it up with a family favorite for dinner, White Chicken Chili
and making a popcorn bar filled with Halloween candy favorites (think Disney Confectionary).
No worries as all recipes are listed below.

P.S: Our family tradition was adopted by our neighbors this year as they enjoyed Disney’s Haunted Mansion together
and a bucket of cheddar popcorn with all the yummy candy bars from our popcorn bar.
Delivering a bucket and finding this out made my heart so very happy.
Some of my favorite memories with my family are from October movie nights and I know our neighbors are making their own with their daughter.


white chicken chili

Ingredients
- 1Tbsp. Olive Oil
- 1.5 lbs. boneless/skinless Chicken breast, cut into small cubes
- 1/4 C. Onion, chopped
- 1 C. Chicken Broth
- 1 (4 oz.) can chopped green chilies
- 2 Green Onions, sliced
- 1 (19oz) can white kidney beans, undrained

Spice Blend
- 1 tsp. garlic powder
- 1/8 tsp. ground red pepper
- 1 tsp. ground cumin
- 1/2 tsp. oregano leaves
- 1/2 tsp. cilantro

Directions:
1. Heat oil in a large saucepan over medium-high heat. Add chicken and onions, cook 4-5 minutes.
2. Stir in broth, green chilies, and spice blend; simmer 15 minutes.
3. Stir in beans, simmer 5 minutes.
4. Serve and enjoy.

Top with green onions, sour cream, and shredded Monterey jack cheese.
*Note: I double this recipe for leftovers and hungry boys with big appetites.

 
 

POPCORN BAR

Ingredients

Popcorn Flavors:
Cheddar
Butter
Caramel
Kettle Corn
*Note: I did not make the popcorn but instead purchased them from a local shop pre-popped and ready to go.

Mixing in Toppings:
- M&M’s
- Candy Corn
- Crushed Oreo
- Crushed Pretzels
- Peanut M&M’s
- Mini Reese’s Cups
- Reese’s Pieces
- White Chocolate Chips
- Peanuts
- Almonds
- Toffee Bits
- Dried Cranberries
- Halloween Sprinkles

Melted Toppings:
- Milk Chocolate
- Caramel
- White Chocolate
- Peanut Butter Drizzle

*Directions for Melted Toppings: Grab 4 Mason Jars. Fill each individual jar with whatever topping you would like to drizzle, I decided on milk chocolate chips, caramel candies, White Chocolate Chips, and Peanut Butter Chips. Place jars (without lids) in a skillet, add water to bottom creating a “water bath” for the chips and candies to melt. Set skillet on medium and let candy melt, coming back to check and stir occasionally. Add to condiment squeeze bottles and serve

How To Assemble:
Grab your popcorn bucket, assembly will be similar to a layered cake style approach. Add 1/2 your popcorn to the bucket. Drizzle with melted toppings of choice. Add mix in toppings. Repeat by adding another layer of popcorn, melted toppings and mix-ins. Don’t forget your sprinkles and Enjoy!
