[2023] Fall Bucket List: Scary Movie Night #3

It’s night 3, hard to believe we only have two more scary movie nights left before Halloween is packed away and Thanksgiving takes over.
Tonight I decided to make a comfort food meal of Chicken Pot Pie Cobbler.
This recipe uses a rotisserie chicken and a box of Red Lobster Cheddar Bay Biscuit Mix I already had on hand.
So easy to whip together with only 8 ingredients that I always seem to have in my freezer or pantry.
For dessert a charcuterie board with a caramel apple theme was a must!
Like the popcorn bar the caramel apple board is interactive where your family can create the ultimate sweet treat.

CHICKEN POT PIE COBBLER

Ingredients

- Butter
- Rotisserie Chicken
- 2 C. Milk
- 2 C. Red Lobster Cheddar Bay Biscuit Mix
- 1 bag frozen Mixed Vegetables or frozen peas & carrots
- 2 C. Chicken Stock
- 1 (10.5 oz.) can Cream of Chicken with Herbs
- Shredded Cheddar Cheese


Directions

1. Preheat the oven to 350 degrees. Melt 1 stick of butter in the bottom of a 9x13 casserole dish in preheated oven.
2. Shred a rotisserie chicken and set aside.
3. In a mixing bowl add 2 cups milk and 2 cups of Red Lobster Cheddar Bay Biscuit Mix. Whisk ingredients together.
4. Once butter is melted remove the 9x13 casserole dish from the oven. Evenly sprinkle the shredded rotisserie chicken over the melted butter.
5. Layer 1 bag of frozen vegetables over the shredded chicken layer.
6. Pour biscuit mix over the top of frozen vegetables and chicken until covered. DO NOT MIX.
7. In a separate mixing bowl add chicken stock and cream of chicken with herbs, whisk together.
8. Pour over the top of the biscuit layer. Remember - DO NOT MIX.
9. Add casserole dish to oven, uncovered for 45 minutes.
10. When done let cobbler sit for 15 minutes before serving. Top with Shredded Cheddar Cheese and enjoy

 
 

Caramel Apple Dessert Board

Ingredients:
- 4 Granny Smith Apples, Cut into Slices

Melted Toppings:
- Milk Chocolate Chips
- White Chocolate Chips
- Caramel

Toppings:
- M&M’s
- Pretzels
- Chopped Pecans
- Mini Marshmallows
- Crushed Heath Bar Bits
- Sprinkles
- Mini Butterscotch or Peanut Butter chips
- Reese’s Pieces
- Chopped Peanuts
- Crushed Oreos
- Flakey Salt
- Toasted Shredded Coconut
- Crushed Cereal (Fruity Pebbles, Cinnamon Toast Crunch)

Directions:
1. Wash and cut 4 granny smith apples into slices. Arrange on wooden cutting board.
2. Grab a muffin tin and add muffin paper cups. Fill cups with with toppings.
3. In three mason jars add 1 bag in each of milk chocolate chips, white chocolate chips, and caramel cubes.
4. Place jars in a skillet filled with water (like a double boiler or water bath) and melt. Be careful when removing jars, they will be hot!
5. Grab a wooden skewer and place in apple. Dip apple slice in whatever melted topping you choose and add toppings. - Enjoy!
